I am Pablo Vazquez, the owner and head chef of TJ's Street Tacos. My passion for authentic Mexican cuisine is deeply rooted in my family's rich culinary history. Inspired by my grandmother's taco stand in Tijuana and my uncle's successful taco shop in California, I have dedicated my life to bringing the vibrant flavors of Tijuana to Seattle. My journey began with a food truck in California, and despite facing significant challenges, including the COVID-19 pandemic and discrimination, I persevered and established TJ's Street Tacos in Seattle's Capitol Hill.
With over 10 years of hands-on experience in the food industry, I have honed my skills in crafting traditional Mexican street food, managing all aspects of a food business, and delivering exceptional customer service. My background as a probation officer in San Bernardino has provided me with a unique perspective on discipline and management, which I apply to running my business.
